Spanish-style mussels

Spanish-style mussels

INGREDIENTS

  • 1 liter (4 cups) cleaned mussels
  • 20 slices of chorizo
  • 1/2 yellow bell pepper, cubed
  • 1/2 green bell pepper, cubed
  • 1 clove garlic, minced
  • 1/2 red onion, thinly sliced
  • 2 basil leaves, chopped
  • 2 parsley sprigs, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

 

INSTRUCTION

  1. Cut the bell peppers into cubes and the chorizo slices into quarters. Thinly slice the onion and mince the garlic.
  2. Preheat your plancha to medium-high heat. Place the mussels on the plancha and cook until they open.
  3. Remove the mussels from the plancha and discard half of the shells.
  4. Drizzle a little oil on the plancha and cook the bell peppers. Add the chorizo and cook until browned, stirring occasionally. Add the garlic and mussels, season with salt and pepper, and toss to combine.
  5. Serve immediately, garnished with basil and parsley.
