Monkfish, crushed cherry tomatoes and basil

Serves 4
Preparation time: 5 minutes
Cooking time: 30 minutes

 

Ingredients

  • 1 garlic clove
  • 300g cherry tomatoes
  • 1 tablespoon wholegrain sugar
  • olive oil
  • 1 monkfish tail, cut into 4 pieces
  • 1 bunch basil
  • salt and pepper

 

Preparation

  1. Peel and degerm garlic. Chop the garlic. Dice the cherry tomatoes.
  2. On a hot plancha grill, brown the garlic and cherry tomatoes. Sprinkle with sugar.
  3. Cook the monkfish steaks on the side with a drizzle of olive oil for 7 to 8 minutes, turning once.
    Once cooked, serve with the crushed cherry tomatoes on top.
  4. Season with salt and pepper. Sprinkle with chopped basil and serve.
