Monkfish, crushed cherry tomatoes and basil

Ingredients
- 1 garlic clove
- 300g cherry tomatoes
- 1 tablespoon wholegrain sugar
- olive oil
- 1 monkfish tail, cut into 4 pieces
- 1 bunch basil
- salt and pepper
Preparation
- Peel and degerm garlic. Chop the garlic. Dice the cherry tomatoes.
- On a hot plancha grill, brown the garlic and cherry tomatoes. Sprinkle with sugar.
- Cook the monkfish steaks on the side with a drizzle of olive oil for 7 to 8 minutes, turning once.
Once cooked, serve with the crushed cherry tomatoes on top. - Season with salt and pepper. Sprinkle with chopped basil and serve.
